”I didn’t know about celiac disease until I became a father. In 2005 two of my daughters were diagnosed with celiac disease. It really shook our world since neither I nor my wife knew much about how to deal with this condition.

In the beginning, everything was new and we didn’t even know where to find gluten-free food. Were we doomed to eat potatoes with our daughters or prepare and serve double dinners for the rest of our lives? Eventually, we began to find our way to the special section in the supermarkets. But, the supply in stores was not great and it was almost impossible to get something to eat safely out of home.

These reasons led me to engage more in celiac disease trying to influence people in the food industry and politicians to acknowledge and help celiacs to a better quality of life. Over the years I feel that there has been a massive change in both knowledge about the disease but also in the supply of products available and eating out. Although, much is still not perfect.”
